Carb Free Stuffed Peppers With Alternative Rice.

Carb Free Stuffed Peppers for two Lovebirds
*Carb Free*Dairy Free*Egg Free*Wheat Free
Ingredients.

4 medium size peppers (I use 2 of each green and red)
1 tablespoon olive oil
2 Medium fresh tomato’s
1 Small onion (finely chopped)
1 Glove of garlic
1 Teaspoon of dried Oregano
20-30 fresh basil leaves
1 tablespoon tomato past
1 teaspoons Worcestershire sauce
1 teaspoons salt
1/2 teaspoon ground black pepper, divided

Meat filling

250 grams lean ground beef or pork
1 cup of diced cauliflower and cabbage
1/2 teaspoons salt
1 Chili finally chopped

Extra special Ingredient

Fresh sliced parmesan cheese
Cooking time 45 mins Preheat oven to 400 degrees F (200 degrees C).
Preparation time 15 mins.
1. Cut the tops off the peppers and remove the stems and seeds carefully with the knife. wash them and place the pepper bodies into a pan of water with a pinch of salt and bring to boil. Simmer for 10 minutes.

2. Heat the olive oil in the frying pan and add the diced the onion and garlic, and simmer for 2 minutes. Chop the tomato’s, the tops of the peppers and add to the onions and mix, then add the tomatoe paste, the oregano and fresh basil, salt, pepper and Worcester sauce and reduce heat and leave to cook for 5 minutes stirring occasionally.
3.While the sauce is cooking finely chop the cauliflower and cabbage so they look the size of rice.

4.In a separate bowl mix in the beef, cauliflower, cabbage, chili and salt so it looks like this.

5. Remove the Peppers from the water and place into an oven proof dish. Spoon the meat mix into the bottom of the peppers, then add some the the tomatoe paste. I like to add some parmesan cheese here, but on a little bit just to give it flavour, but if you can’t have dairy then leave it out. Parmesan cheese has a lovely strong flavour so you don’t need much 😉 Then spoon in the rest of the paste and place you peppers into a preheated oven and cook for 40-45 mins.

I love this recipe as its easy to prepare and once in the oven you have 40 minutes to prepare for your guests and relax with a nice glass of red wine.

Hints

Sometimes I’d like to add some red wine to create some extra flavour. Don’t forget to add your favs to see what you can come up with 😉
